Born and raised in New York City, Nicolas began his journey at the International Culinary Center in Manhattan, where he worked and studied under Master Sommeliers. He applied his knowledge as he learned his trade in many of the city' most celebrated dining rooms, including Pasquale Jones, Upland, and COTE Korean Steakhouse. Today he runs his own consulting and events company, NCM Sommelier Services, writes a Substack, Word to the Wine, and brings his expertise to Night Inn!
